  • ½ tsp nutmeg
  • 2 eggs
  • 1 stick of butter (softened)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Grate zucchini using a rotary grater and squeeze out excess water with a clean kitchen towel.
  3. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In a large mixing bowl, cream together the eggs, sugars, butter, and vanilla using a hand mixer until smooth.
  5. Gently fold in zucchini.
  6. Slowly add the dry ingredients to the wet ingredients, stirring just until combined.
  7. Fold in the chocolate chips.
