- 1 cup Heavy cream
- 8 oz Dark chocolate
- 1/4 cup Cookie butter

- Prepare the Crust: Crush the Biscoff cookies finely using a food processor or a rolling pin. Mix with melted butter until well combined. Press this mixture firmly into the bottom of a tart pan, creating an even layer. Chill in the refrigerator for about 30 minutes to set.
- Make the Ganache: In a small saucepan, heat the heavy cream over medium heat until just simmering. Remove from heat, and pour it over the chopped dark chocolate in a bowl. Let it sit for 2-3 minutes, then stir until smooth and glossy.
- Assemble the Tart: Remove your chilled crust from the refrigerator. Pour the ganache into the crust, spreading it evenly. Chill the tart in the fridge for at least 4 hours, or until it firms up beautifully.
- Serve with Style: Once firm, slice the tart using a sharp knife for clean pieces. Serve it chilled, optionally topping with whipped cream or chocolate shavings for a touch of elegance.
