  • 2 pounds chicken (breasts, thighs, or drumsticks, bone-in or boneless)

Instructions

  1. Combine the olive oil, honey, minced garlic, chipotle peppers in adobo sauce, ground cumin, kosher salt, and freshly ground black pepper in a blender or small food processor. Process until the mixture is smooth and well combined.
  2. Pour the prepared marinade over the chicken pieces in a sturdy, resealable bag or an airtight container. Ensure all chicken pieces are thoroughly coated. Refrigerate for a minimum of 2 hours, ideally 4 to 6 hours, or overnight for optimal flavor penetration. Turn the chicken or flip the bag periodically to ensure even marination.
  3. Approximately 30 minutes before you intend to cook, remove the marinated chicken from the refrigerator and allow it to come to room temperature. This promotes more even cooking. Cook the chicken using your preferred method, such as grilling, baking, or pan-searing.
