- 1/2 cup red onion, finely chopped
- 1/2 cup red bell pepper, diced
- 1/4 cup cilantro, chopped
- 1 jalapeño, seeded and minced
- 2 tablespoons lime juice
- 1 teaspoon chipotle powder
- Salt to taste
Instructions
- In a large bowl, combine the corn, red onion, red bell pepper, cilantro, and jalapeño.
- Add lime juice and chipotle powder to the mixture.
- Season with salt to taste and mix well.
- Let the salsa sit for at least 30 minutes to allow the flavors to meld.
