- 1 lb ground beef
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 1 medium bell pepper (diced)
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup beef or vegetable broth
- optional toppings: shredded cheese, sour cream, chopped green onions, jalapeños
Instructions
- Heat a splash of olive oil in a large pot over medium heat.
- Add diced onion and sauté for 3-4 minutes until translucent.
- Stir in minced garlic and bell pepper, cooking for an additional 2-3 minutes.
- Add ground beef, breaking it up, and cook until browned, about 5-7 minutes.
- Sprinkle in chili powder, cumin, smoked paprika, salt, and black pepper, stirring well.
- Pour in crushed tomatoes and broth, stirring to combine, and bring to a simmer.
- Add kidney beans and black beans, mixing thoroughly.
- Reduce heat to low, cover, and let simmer for 20-30 minutes, stirring occasionally.
- Taste and adjust seasonings; simmer uncovered for 10-15 minutes for a thicker chili.
- Serve hot with your choice of toppings.
