- 3 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 teaspoon cornstarch
- 1 tablespoon vegetable oil
- Salt and black pepper to taste
- Chopped green onions and sesame seeds for garnish (optional)
Instructions
- In a small bowl, whisk together the soy sauce, rice vinegar, honey, and cornstarch. Set aside.
- Heat the vegetable oil in a large skillet or wok over high heat.
- Add the chicken and cook, stirring occasionally, until lightly browned and cooked through, about 5-7 minutes.
- Add the zucchini, garlic, and ginger to the skillet and continue to cook for 2-3 minutes, until the zucchini is crisp-tender.
- Pour in the soy sauce mixture and toss to coat the chicken and zucchini. Cook for an additional 1-2 minutes, or until the sauce has thickened.
- Season with salt and black pepper to taste.
