Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 lb broccoli florets
  • 1 lb baby potatoes, halved
  • 1 red onion, cut into wedges
  • 3 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil, paprika, garlic powder, salt, and pepper.
  3. In the same bowl, toss the potatoes and red onion with 1 tablespoon of olive oil, salt, and pepper.
  4. Spread the potatoes and onions in a single layer on a large baking sheet. Roast for 15 minutes.
  5. While the potatoes and onions are roasting, toss the broccoli florets with the remaining 1 tablespoon of olive oil, oregano, salt, and pepper.
  6. Add the seasoned chicken pieces to the baking sheet with the potatoes and onions.
  7. Roast for another 10 minutes.
  8. Add the seasoned broccoli to the baking sheet.
  9. Continue roasting for 10-15 minutes, or until the chicken is cooked through and the vegetables are tender and slightly browned.
  10. Serve your easy sheet pan chicken dinner hot.

  • You can substitute chicken breasts for chicken thighs, but adjust cooking time as they cook faster.
