  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion, sliced carrots, and chopped celery. Cook for about 5 minutes, stirring occasionally, until softened.
  2. Add minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
  3. Pour in the chicken broth and bring to a rolling boil over high heat.
  4. Add the orzo pasta, stir once, and reduce heat to medium-low. Cook for 7 minutes, or until al dente, stirring occasionally.
  5. Stir in the shredded chicken and dried thyme. Let it simmer for 3 minutes to heat through.
