A flavorful and aromatic chicken laksa noodle soup that combines tender chicken, rice noodles, and a rich coconut-based broth with spices.

- 2 chicken fillets, sliced
- 200g rice noodles
- 400ml coconut milk
- 2 tbsp laksa paste
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp ginger, grated
- 1 red chili, sliced
- 500ml chicken stock
- 1 tbsp fish sauce
- 1 tbsp lime juice
- Fresh cilantro for garnish
- Bean sprouts for serving
Instructions
- Heat oil in a pot over medium heat. Add onion, garlic, ginger, and chili. Cook for 2 minutes.
- Add laksa paste and stir for 1 minute until fragrant.
- Pour in chicken stock and coconut milk. Bring to a simmer.
- Add chicken slices and cook for 8-10 minutes until fully cooked.
- Meanwhile, prepare rice noodles according to package instructions.
- Stir in fish sauce and lime juice. Adjust seasoning if needed.
- Divide noodles into bowls, ladle the soup over them, and top with bean sprouts and cilantro.
