Description

A flavorful and aromatic chicken laksa noodle soup that combines tender chicken, rice noodles, and a rich coconut-based broth with spices.


Ingredients

  • 2 chicken fillets, sliced
  • 200g rice noodles
  • 400ml coconut milk
  • 2 tbsp laksa paste
  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ginger, grated
  • 1 red chili, sliced
  • 500ml chicken stock
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • Fresh cilantro for garnish
  • Bean sprouts for serving

Instructions

  1. Heat oil in a pot over medium heat. Add onion, garlic, ginger, and chili. Cook for 2 minutes.
  2. Add laksa paste and stir for 1 minute until fragrant.
  3. Pour in chicken stock and coconut milk. Bring to a simmer.
  4. Add chicken slices and cook for 8-10 minutes until fully cooked.
  5. Meanwhile, prepare rice noodles according to package instructions.
  6. Stir in fish sauce and lime juice. Adjust seasoning if needed.
  7. Divide noodles into bowls, ladle the soup over them, and top with bean sprouts and cilantro.
