A comforting and flavorful chicken glass noodle soup that’s easy to make and perfect for any meal. This quick soup comes together in under 35 minutes, making it an ideal weeknight meal.

- 200g glass noodles
- 500g chicken breast, sliced thin
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 carrot, julienned
- 1L chicken broth
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp black pepper
- 2 spring onions, chopped
- 1 tbsp vegetable oil
Instructions
- Soak glass noodles in warm water for 10 minutes, then drain.
- Heat oil in a pot over medium heat. Sauté onion and garlic until fragrant, about 2 minutes.
- Add sliced chicken breast and cook until no longer pink, stirring occasionally.
- Pour in chicken broth and bring to a gentle boil.
- Add julienned carrot, soy sauce, fish sauce, and black pepper. Simmer for 10 minutes.
- Add the soaked glass noodles to the pot and cook for about 3 minutes until tender.
- Turn off the heat, garnish with chopped spring onions, and serve hot.
Notes
- Adjust seasoning to taste.
- Add vegetables like bok choy or mushrooms in the last 5 minutes of cooking.
- Store leftovers in an airtight container in the fridge for up to 2 days.
- Reheat gently on the stovetop over low heat.
