  • 2 lbs boneless skinless chicken thighs, cut into 1.5-inch pieces
  • 1012 bamboo skewers, soaked in water for 30 minutes

Instructions

  1. Prepare the marinade: In a large bowl, whisk together soy sauce, brown sugar, sesame oil, rice vinegar, minced garlic, grated ginger, gochujang, honey, black pepper, chopped green onions, and toasted sesame seeds.
  2. Marinate the chicken: Add the cut chicken thighs to the marinade. Toss to coat them well. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight.
  3. Preheat the grill: Set your grill to medium-high heat. If using an indoor grill pan, preheat it until hot and lightly oil it.
  4. Assemble the skewers: Thread 4-5 pieces of marinated chicken onto each soaked skewer. Leave a little space between the chicken pieces for even cooking.
  5. Grill the skewers: Place the skewers on the grill. Cook for 5-6 minutes per side, until the chicken reaches an internal temperature of 165°F and has slight charring on the edges. Baste with leftover marinade once or twice during cooking.
