- ½ cup low-sodium soy sauce
- 3 tablespoons brown sugar
- 2 tablespoons sesame oil

- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon honey
- 1 teaspoon black pepper, freshly ground
- 2 green onions, finely chopped
- 1 tablespoon toasted sesame seeds
- For the Chicken:
- 2 lbs boneless skinless chicken thighs, cut into 1.5-inch pieces
- 10–12 bamboo skewers, soaked in water for 30 minutes

Instructions
- Prepare the marinade: In a large bowl, whisk together soy sauce, brown sugar, sesame oil, rice vinegar, minced garlic, grated ginger, gochujang, honey, black pepper, chopped green onions, and toasted sesame seeds.
- Marinate the chicken: Add the cut chicken thighs to the marinade. Toss to coat them well. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight.
- Preheat the grill: Set your grill to medium-high heat. If using an indoor grill pan, preheat it until hot and lightly oil it.
- Assemble the skewers: Thread 4-5 pieces of marinated chicken onto each soaked skewer. Leave a little space between the chicken pieces for even cooking.
- Grill the skewers: Place the skewers on the grill. Cook for 5-6 minutes per side, until the chicken reaches an internal temperature of 165°F and has slight charring on the edges. Baste with leftover marinade once or twice during cooking.
- Garnish and serve: Sprinkle with extra sesame seeds and chopped green onions. Serve with lime wedges for a fresh squeeze of citrus.

- Bamboo skewers should be soaked for at least 30 minutes to prevent burning on the grill.
- For deeper flavor, marinate the chicken overnight.
- Chicken breasts can be used, but cook them carefully to avoid drying out.
