- 1 teaspoon olive oil
- 1 cup chopped carrots
- 1 cup chopped yellow onion
- 1/2 cup chopped celery
- 2 cloves garlic, minced
- 1.5 pounds bone-in, skinless chicken breast
- 7 cups low-sodium chicken broth
- 1/4 cup fresh parsley, chopped
- 2 bay leaves
- 2/3 cup dry pearl barley
- Freshly ground black pepper, to taste
Instructions
- Heat a large, heavy pot or Dutch oven over medium heat. Add the olive oil, carrots, onion, celery, and garlic to the pot, stirring occasionally until the vegetables soften slightly, about 5-7 minutes.
- Add the chicken breast, chicken broth, chopped parsley, and bay leaves to the pot. Bring the mixture to a rolling boil, then reduce the heat to low. Cover the pot and simmer gently until the chicken and vegetables are tender, approximately 30 minutes.
- Carefully remove the cooked chicken from the pot. Shred the meat, discarding the bones, and return the shredded chicken to the soup. Add the dry pearl barley to the pot, adjust seasoning with salt if necessary, and season generously with freshly ground black pepper. Continue to simmer for an additional 30 minutes, or until the barley is cooked through and tender.
- Remove and discard the bay leaves from the soup before serving. Ladle the hearty chicken barley soup warm into bowls.
