Description

These Soft & Chewy Oatmeal Raisin Bars are a wholesome and delicious snack, perfect for a quick breakfast or an energizing treat.


Ingredients

  • 4 cups rolled oats (use quick-cooking oats for a finer texture)
  • 1 tsp cinnamon
  • ⅓ cup chopped pecans or walnuts
  • 1 cup raisins (reserve a handful to sprinkle on top)
  • Pinch of salt
  • 1 ½ cups mashed ripe bananas (about 3 large bananas)
  • 1 cup creamy peanut butter (can substitute almond or cashew butter)
  • ⅓ cup maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8 inch baking pan with parchment paper or lightly grease it.
  3. In a large mixing bowl, combine the mashed bananas, peanut butter, and maple syrup until smooth.
  4. Add the rolled oats, salt, cinnamon, chopped nuts, and raisins to the wet mixture. Stir thoroughly.
  5. Pour the batter into the prepared baking dish, spreading it evenly and pressing down with a spatula.
  6. Sprinkle the reserved handful of raisins over the top.
  7. Bake for 22–26 minutes or until edges are set and a toothpick comes out mostly clean.
  8. Allow the bars to cool completely in the pan before lifting out and cutting into 12 square bars.
  9. Enjoy the bars warm or cooled. For storage, wrap each bar individually and freeze for up to 3 months.
