These Soft & Chewy Oatmeal Raisin Bars are a wholesome and delicious snack, perfect for a quick breakfast or an energizing treat.
Ingredients

- 4 cups rolled oats (use quick-cooking oats for a finer texture)
- 1 tsp cinnamon
- ⅓ cup chopped pecans or walnuts
- 1 cup raisins (reserve a handful to sprinkle on top)
- Pinch of salt
- 1 ½ cups mashed ripe bananas (about 3 large bananas)
- 1 cup creamy peanut butter (can substitute almond or cashew butter)
- ⅓ cup maple syrup
Instructions
- Preheat your oven to 350°F (175°C).
- Line an 8×8 inch baking pan with parchment paper or lightly grease it.
- In a large mixing bowl, combine the mashed bananas, peanut butter, and maple syrup until smooth.
- Add the rolled oats, salt, cinnamon, chopped nuts, and raisins to the wet mixture. Stir thoroughly.
- Pour the batter into the prepared baking dish, spreading it evenly and pressing down with a spatula.
- Sprinkle the reserved handful of raisins over the top.
- Bake for 22–26 minutes or until edges are set and a toothpick comes out mostly clean.
- Allow the bars to cool completely in the pan before lifting out and cutting into 12 square bars.
- Enjoy the bars warm or cooled. For storage, wrap each bar individually and freeze for up to 3 months.
Notes
- Use ripe bananas for natural sweetness.
- Experiment with different nuts or add chocolate chips for variation.
