- 2 tablespoons olive oil
- 4 garlic cloves, minced
- ¼ cup tomato paste
- 2 (15-ounce) cans white beans, drained and rinsed
- ½ cup boiling water
- Salt and freshly cracked black pepper, to taste
- 1 cup shredded mozzarella cheese
- ⅓ cup grated Parmesan cheese
Instructions
- Preheat the oven to 475°F.
- Heat olive oil in an oven-safe skillet over medium heat and add minced garlic. Cook for 2 minutes until fragrant.
- Stir in tomato paste and cook for 1 minute to caramelize slightly.
- Add the drained and rinsed white beans and boiling water, seasoning with salt and pepper, and stir until combined.
- Top with shredded mozzarella and grated Parmesan.
- Transfer skillet to the oven and bake for 8-10 minutes until cheese is melted and brown at the edges.
- Optionally, broil for 1-2 minutes for extra crispiness.
- Remove from the oven, let cool for 2 minutes, and serve with toasted bread or chips.
