Ingredients

Scale
  • pounds ground beef
  • 1 medium onion, diced
  • 10½ ounces condensed cream of mushroom soup
  • 10½ ounces condensed cream of chicken soup
  • 10 ounces red enchilada sauce (mild)
  • 4 ounces canned green chilis

  6. Repeat with the remaining tortilla chips and the rest of the beef mixture.
  7. Top everything evenly with the shredded cheddar cheese.
  8. Bake the casserole uncovered for 20 minutes.
  9. Switch the oven to broil and broil for about 2 minutes, watching closely to brown and bubble the cheese without burning.

Notes

  • You can substitute ground turkey, chicken, or sausage for the ground beef.
  • Add a can of black beans or corn for a heartier filling.
  • Use hot enchilada sauce or add a diced jalapeño for extra spice.
  • Pepper jack cheese can be used for a spicy kick.
  • Crushed taco shells or Doritos can be used if you are short on tortilla chips.
  • For a vegetarian option, use a plant-based meat substitute or a mix of beans and vegetables.
