  • 1/4 cup low-sodium Chicken Broth
  • 1.5 to 2 cups Shredded Cheese Blend (Monterey Jack, mild cheddar, or Mexican blend)
  • 2 tablespoons Cream Cheese (Optional but Recommended)
  • Salt and Black Pepper, to taste
  • 810 medium-sized (8-inch) Flour Tortillas
  • Fresh Parsley or Chives (Optional Garnish)

Instructions

  1. Cook the chicken by placing 1 to 1.5 pounds of boneless, skinless chicken breasts or thighs in a pot, covering them with water or chicken broth, and bringing it to a boil. Reduce the heat and simmer for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  2. Once cooked, remove the chicken from the liquid and let it cool slightly. Shred the chicken into bite-sized pieces using two forks or dice it finely. Season lightly with salt and pepper and set aside.
  3. In a large skillet or saucepan, melt 2 tablespoons of butter over medium heat. Add the minced garlic (and diced onion if using) and sauté for about 1 minute until fragrant.
  4. Sprinkle in 2 tablespoons of all-purpose flour over the melted butter and garlic. Whisk constantly for 1-2 minutes to create a roux.
  5. Gradually pour in 1.5 cups of milk, whisking continuously to prevent lumps. Continue to whisk as the mixture comes to a gentle simmer and starts to thicken, about 3-5 minutes.
  6. Reduce the heat to low. Stir in 1.5 to 2 cups of shredded cheese blend (and 2 tablespoons of cream cheese if using) a handful at a time, whisking until each addition is fully melted and smooth.
  7. Once all the cheese is incorporated and the sauce is creamy, season it with salt and freshly ground black pepper to taste.
  8. Add the prepared shredded chicken to the cheesy garlic sauce in the skillet and stir gently until the chicken is thoroughly coated and warmed through.
  9. Warm the tortillas slightly in the microwave for 15-20 seconds, in a 300°F (150°C) oven for 5-7 minutes, or on a dry skillet over medium heat for about 15-20 seconds per side.
  10. Lay a warm tortilla flat on a clean surface. Spoon about 1/3 to 1/2 cup of the cheesy garlic chicken filling onto the center of the tortilla, leaving a border around the edges.
  11. Fold in the sides of the tortilla over the filling, then tightly roll the tortilla upwards, encasing the filling securely.
  12. Repeat with the remaining tortillas and filling.
  13. Serve the Cheesy Garlic Chicken Wraps immediately while warm, garnished with fresh parsley or chives if desired.
