This hearty casserole combines tender chicken, creamy potatoes, and fresh broccoli, all topped with melted cheddar cheese. It’s a comforting dish perfect for family dinners.


Ingredients

  • 2 cups cooked chicken (shredded or diced)
  • 4 medium potatoes (peeled and thinly sliced)
  • 2 cups fresh broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper
  • 1 tablespoon olive oil
  • ½ cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken, sour cream, chicken broth, garlic powder, onion powder, paprika, salt, and pepper. Mix well.
  3. In a greased 9×13 inch casserole dish, layer half of the sliced potatoes on the bottom.
  4. Sprinkle a layer of broccoli florets over the potatoes, followed by half of the chicken mixture.
  5. Repeat the layers with the remaining potatoes, broccoli, and chicken mixture.
  6. Top with shredded cheddar cheese and sprinkle breadcrumbs if desired.
  7. Drizzle olive oil over the top.
  8. Cover with aluminum foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 15-20 minutes until golden brown.
  10. Let it cool for a few minutes before serving.
