- 2 cups cooked chicken (shredded or diced)
- 4 medium potatoes (peeled and thinly sliced)
- 2 cups fresh broccoli florets
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- to taste salt
- to taste pepper
- 1 tablespoon olive oil
- ½ cup breadcrumbs (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the shredded chicken, sour cream, chicken broth, garlic powder, onion powder, paprika, salt, and pepper. Mix well.
- In a greased 9×13 inch casserole dish, layer half of the sliced potatoes on the bottom.
- Sprinkle a layer of broccoli florets over the potatoes, followed by half of the chicken mixture.
- Repeat the layers with the remaining potatoes, broccoli, and chicken mixture.
- Top with shredded cheddar cheese and sprinkle breadcrumbs if desired.
- Drizzle olive oil over the top.
- Cover with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes until golden brown.
- Let it cool for a few minutes before serving.
