Instructions

  1. In a small bowl, combine yeast, sugar, and warm water. Let stand for 5-10 minutes until foamy.
  2. In a large bowl, whisk together 2 1/2 cups of flour and salt. Make a well in the center and pour in the yeast mixture and melted butter.
  3. Mix until a shaggy dough forms. Turn out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic, adding more flour as needed.
  4. Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  5. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  6. Punch down the dough. Divide into 8 equal portions.
  7. Flatten each portion into a small circle. Place about 1 tablespoon of shredded cheese in the center of each circle.
  8. Pinch the edges of the dough together to seal the cheese inside, forming a ball. Ensure the cheese is fully enclosed. These are your cheese stuffed pretzel balls.
  9. In a shallow dish, whisk the egg.
  10. In a separate bowl, dissolve baking soda in 4 cups of hot water.
