A quick and easy homemade cheddar herb soda bread recipe. This savory loaf features sharp cheddar cheese and fresh herbs, perfect for serving with soups, stews, or as a snack.

- 4 cups all-purpose flour
- 1 ½ tsp baking soda
- 1 tsp salt
- 2 tbsp chopped fresh chives
- 1 tbsp fresh thyme
- 1 ¾ cups buttermilk
- 1 cup cheddar cheese, shredded
- 2 tsp lemon juice or vinegar (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet.
- If not using store-bought buttermilk, mix 2 tsp lemon juice or vinegar with milk and let sit for 5 minutes to curdle.
- Whisk together flour, baking soda, and salt in a large bowl.
- Stir in chopped herbs and three-quarters of the shredded cheddar cheese.
- Pour in buttermilk and stir gently until a shaggy dough forms.
- On a lightly floured surface, knead dough gently until it comes together. Do not overwork.
- Shape dough into a round disc, 1½ to 2 inches thick, and transfer to the prepared baking sheet.
- Sprinkle the remaining cheddar cheese over the top of the loaf.
- Cut a deep “X” across the top with a sharp knife.
- Bake for 30–35 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
- Let cool on a wire rack before slicing and serving.
Notes
- This cheddar herb soda bread is best enjoyed fresh.
- Leftovers can be stored in an airtight container at room temperature for up to 2 days.
- For longer storage, wrap slices tightly and freeze.
- Reheat by toasting slices or warming in the oven.
