- 4 cups shredded carrots
- 1 cup raisins
- ½ cup crushed pineapple, drained
- ½ cup mayonnaise
- 2 tablespoons sugar
- 1 tablespoon lemon juice
- ½ teaspoon salt
Instructions
- Peel and shred the carrots using a grater or food processor.
- If needed, soak raisins in warm water for a few minutes, then drain.
- In a bowl, mix mayonnaise, sugar, lemon juice, and salt until smooth.
- Add shredded carrots, raisins, and crushed pineapple to the bowl.
- Pour the dressing over the ingredients and stir until evenly coated.
- Cover and refrigerate for at least 1 hour to allow flavors to blend.
- Stir before serving and enjoy chilled.
