Ingredients

  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 4 medium carrots (about 2 cups), peeled and chopped
  • 2 medium potatoes (about 2 cups), peeled and diced
  • 4 cups vegetable broth (or chicken broth)
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)
  • 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme (optional)
  • ¼ cup heavy cream or milk (optional, for added creaminess)
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Sauté chopped onion and minced garlic for 3–4 minutes until soft and fragrant.
  3. Add chopped carrots and diced potatoes. Stir and cook for another 5 minutes.
  4. Pour in vegetable broth, add salt, black pepper, and thyme if using.
  5. Bring to a boil, then reduce heat, cover, and simmer for 20–25 minutes until vegetables are fork-tender.
  6. Use an immersion blender to blend the soup until smooth. Alternatively, blend in batches in a countertop blender.
  7. If desired, stir in heavy cream or milk for a creamier texture and gently reheat.
  8. Taste and adjust seasoning. Serve hot with fresh parsley garnish.

Notes

  • For a vegan version, use vegetable broth and skip the dairy or use coconut milk.
  • Carrot and potato skins can be left on for added fiber and nutrients if they are thin and fresh.
  • The flavors deepen when the soup is made a day in advance.
  • To thicken, simmer longer uncovered or add an extra potato before blending.
