- 1.5 pounds of boneless, skinless chicken thighs
- 1 cup long-grain rice
- 1 can (15 ounces) coconut milk
- 1 cup chicken broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes (optional, for heat)
- 1 cup frozen peas
- 2 tablespoons olive oil
- Fresh cilantro, for garnish (optional)
Instructions
- Season the chicken thighs with salt, pepper, cumin, paprika, and thyme. Ensure they are evenly coated.
- In a large skillet or pan over medium heat, add the olive oil. Once hot, add the seasoned chicken thighs.
- Cook the chicken for about 5-7 minutes on each side, or until golden brown. Remove the chicken from the pan and set aside.
- In the same pan, add the diced onion, bell pepper, and minced garlic. Sauté for 2-3 minutes until softened.
- Stir in the rice and cook for an additional 1-2 minutes, allowing it to absorb the flavors from the veggies.
- Pour in the coconut milk and chicken broth. Stir well to combine all the ingredients.
- Nestle the browned chicken thighs back into the pan, ensuring they are partially submerged in the liquid.
- Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pan and let it simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
- In the last 5 minutes of cooking, add the frozen peas. Stir gently to combine.
- Ensure the chicken is cooked through and that the rice is fluffy.
- Remove from heat and let it rest for a few minutes. Garnish with fresh cilantro before serving.
