  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional, for heat)
  • 1 cup frozen peas
  • 2 tablespoons olive oil
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Season the chicken thighs with salt, pepper, cumin, paprika, and thyme. Ensure they are evenly coated.
  2. In a large skillet or pan over medium heat, add the olive oil. Once hot, add the seasoned chicken thighs.
  3. Cook the chicken for about 5-7 minutes on each side, or until golden brown. Remove the chicken from the pan and set aside.
  4. In the same pan, add the diced onion, bell pepper, and minced garlic. Sauté for 2-3 minutes until softened.
  5. Stir in the rice and cook for an additional 1-2 minutes, allowing it to absorb the flavors from the veggies.
  6. Pour in the coconut milk and chicken broth. Stir well to combine all the ingredients.
  7. Nestle the browned chicken thighs back into the pan, ensuring they are partially submerged in the liquid.
  8. Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pan and let it simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
  9. In the last 5 minutes of cooking, add the frozen peas. Stir gently to combine.
  10. Ensure the chicken is cooked through and that the rice is fluffy.
