- 1 sheet pre-made pie crust
- 1 medium butternut squash, peeled, seeded, and cubed (about 3 cups)
- 2 tablespoons olive oil
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 2 tablespoons unsalted butter
- 2 large yellow onions, thinly sliced
- 2 eggs
- 1 cup heavy cream
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Instructions
- Preheat oven to 400°F.
- Toss the butternut squash cubes with olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and lightly browned.
- In a large skillet, melt the butter over medium heat. Add the sliced onions and the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook, stirring occasionally, for 20-25 minutes, until the onions are deeply caramelized.
- In a large bowl, whisk together the eggs, heavy cream, brown sugar, cinnamon, and nutmeg.
- Roll out the pie crust and press it into a 9-inch tart pan with a removable bottom. Spread the roasted butternut squash in an even layer in the crust, then top with the caramelized onions.
- Pour the egg mixture over the top, making sure to evenly distribute it.
- Bake for 35-40 minutes, until the center is set and the top is golden brown.
- Allow to cool for at least 20 minutes before slicing and serving.
