  • 1 medium head green cabbage (about 2 pounds)
  • 4 tablespoons olive oil (divided)
  • 2 tablespoons butter
  • 1 small yellow onion (about 8 ounces, sliced)
  • 3 cloves garlic (minced or finely grated)
  • ¼ cup tomato paste (from the tube)
  • 1 teaspoon ground cumin
  • 1 tablespoon brown sugar (optional)
  • 1 teaspoon smoked paprika
  • ½ teaspoon fine sea salt (plus more to taste)
  • 1 cup water or low-sodium chicken or vegetable broth
  • ¼ teaspoon crushed red pepper flakes
  • 2 tablespoons fresh dill (chopped)
  • ½ cup sour cream (or Greek yogurt)
  • 1 tablespoon Parmesan (grated)

Instructions

  1. Preheat the oven to 350°F.
  2. Cut the cabbage in half through the core and then into 3 wedges each, keeping the core intact for stability. Season generously with salt.
  3. Heat a large ovenproof skillet over medium-high heat, adding 1 tablespoon of olive oil and 2 tablespoons of butter. Sear 3 wedges of cabbage for about 3-4 minutes per side until browned and slightly softened, then transfer to a plate. Repeat with the remaining wedges.
  4. Add the remaining 2 tablespoons of olive oil to the skillet. Cook the sliced onion for about 3 minutes, stirring frequently, until softened and fragrant.
  5. Incorporate the minced garlic, ground cumin, smoked paprika, and optional brown sugar. Sauté for about 30 seconds.
  6. Mix in the tomato paste and simmer for 2-3 minutes until it darkens slightly.
  7. Pour in the water or broth, then bring it to a boil. Taste and adjust the seasoning.
  8. Return the browned cabbage wedges to the skillet, overlapping some corners to fit.
  9. Bake in the preheated oven for 40-50 minutes until the cabbage softens and half of the liquid has evaporated.
  10. Serve hot, topped with fresh dill, sour cream or Greek yogurt, and optional Parmesan.
