- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- 1 tablespoon basil pesto
- 2 cloves garlic, freshly minced

- 1 cup sour cream
- 1/4 cup fresh chopped basil
- 1 cup low-moisture mozzarella cheese
- 1 cup shredded provolone cheese
- 1/4 cup freshly grated parmesan cheese
- as needed crusty bread
- as needed crackers
- as needed tortilla chips
Instructions
- Preheat the Oven: Set your oven to 400°F and adjust the rack to the middle position.
- Prepare the Tomatoes: In a 2-quart baking dish or cast iron skillet, add 1 cup of whole cherry tomatoes. Drizzle them with olive oil, sprinkle with pesto, minced garlic, salt, and pepper to taste. Toss gently to coat the tomatoes. Bake for 15 minutes, until they’re starting to burst.
- Mix the Cheesy Goodness: While the tomatoes roast, combine the sour cream and fresh chopped basil in a large bowl. Gently fold in the mozzarella, provolone, and parmesan cheeses until well mixed.
- Combine Ingredients: Once the tomatoes are done roasting, add the cheese mixture to them and toss to combine. Cut the remaining cup of tomatoes in half and arrange them on top.
- Bake It All Together: Return the dish to the oven and bake for another 20 minutes until the cheese is melted and bubbly.
