A simple, flavorful, and easy-to-make campfire dinner featuring smoked sausage and mixed vegetables cooked in foil packs.

- 12 ounces smoked sausage, sliced into 1/2-inch pieces (Kielbasa or Andouille recommended)
- 2 medium bell peppers, cut into 1-inch chunks (any color)
- 1 medium red onion, sliced into thin wedges
- 1 medium zucchini, sliced into 1/2-inch rounds
- 1 cup baby potatoes (about 150 grams), halved or quartered
- 2 tablespoons olive oil (extra virgin preferred)
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
- Fresh parsley (optional), chopped for garnish
Instructions
- Slice the smoked sausage into 1/2-inch rounds. Chop bell peppers into 1-inch chunks, slice the onion into wedges, and cut zucchini into 1/2-inch rounds. Halve or quarter baby potatoes if using.
- In a large mixing bowl, combine sausage, bell peppers, onion, zucchini, and potatoes. Drizzle with olive oil.
- Sprinkle garlic powder, smoked paprika, dried oregano, salt, and pepper over the mixture.
- Toss everything well until oil and seasonings evenly coat all pieces.
- Tear off four 12×12 inch pieces of heavy-duty aluminum foil. Divide the mixture evenly among the foil squares, placing it in the center of each.
- Fold the foil over the ingredients and crimp edges tightly on all sides to create sealed packets, leaving a little space inside for steam circulation.
- Place foil packs on hot campfire coals or grill. Cook for 20-25 minutes, flipping halfway through for even cooking. Alternatively, bake in a 400°F (200°C) oven on a rimmed baking sheet for 25 minutes.
- Carefully open one pack to check doneness; potatoes should be tender and vegetables soft but not mushy.
- If needed, reseal and cook for an additional 5-10 minutes.
- Sprinkle chopped fresh parsley on top before serving.
