Ingredients

  • 12 ounces smoked sausage, sliced into 1/2-inch pieces (Kielbasa or Andouille recommended)
  • 2 medium bell peppers, cut into 1-inch chunks (any color)
  • 1 medium red onion, sliced into thin wedges
  • 1 medium zucchini, sliced into 1/2-inch rounds
  • 1 cup baby potatoes (about 150 grams), halved or quartered
  • 2 tablespoons olive oil (extra virgin preferred)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley (optional), chopped for garnish

Instructions

  1. Slice the smoked sausage into 1/2-inch rounds. Chop bell peppers into 1-inch chunks, slice the onion into wedges, and cut zucchini into 1/2-inch rounds. Halve or quarter baby potatoes if using.
  2. In a large mixing bowl, combine sausage, bell peppers, onion, zucchini, and potatoes. Drizzle with olive oil.
  3. Sprinkle garlic powder, smoked paprika, dried oregano, salt, and pepper over the mixture.
  4. Toss everything well until oil and seasonings evenly coat all pieces.
  5. Tear off four 12×12 inch pieces of heavy-duty aluminum foil. Divide the mixture evenly among the foil squares, placing it in the center of each.
  6. Fold the foil over the ingredients and crimp edges tightly on all sides to create sealed packets, leaving a little space inside for steam circulation.
  7. Place foil packs on hot campfire coals or grill. Cook for 20-25 minutes, flipping halfway through for even cooking. Alternatively, bake in a 400°F (200°C) oven on a rimmed baking sheet for 25 minutes.
  8. Carefully open one pack to check doneness; potatoes should be tender and vegetables soft but not mushy.
  9. If needed, reseal and cook for an additional 5-10 minutes.
  10. Sprinkle chopped fresh parsley on top before serving.
