- 3 tablespoons olive oil
- 1 pound boneless skinless chicken breast, cut into 1-inch cubes
- 16 ounces beef sausage, sliced into ½-inch rounds
- 1 medium white onion, finely diced
- 4 medium celery ribs, sliced thinly
- 1 medium green bell pepper, seeded and diced
- 1 medium jalapeno, finely minced
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon cayenne pepper
- 3 tablespoons all-purpose flour
- 4 cups chicken broth
- 2 (15 ounce) cans great northern beans, drained and rinsed
Instructions
- Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Sear cubed chicken breast in batches until golden brown, then remove and set aside.
- Add sliced beef sausage to the pot and cook until browned. Remove sausage and add to the plate with chicken, leaving rendered fat in the pot.
- Reduce heat to medium. Sauté diced white onion, sliced celery, and diced green bell pepper in the rendered fat for 8-10 minutes until softened. Add minced jalapeno and garlic, cook for 1-2 minutes until fragrant.
- Sprinkle ground cumin, smoked paprika, chili powder, and cayenne pepper over vegetables. Stir and cook for 1 minute to toast spices.
- Sprinkle all-purpose flour over the mixture and stir continuously for 2 minutes to create a roux. Gradually whisk in chicken broth, scraping the bottom of the pot. Bring to a simmer.
- Return seared chicken and browned beef sausage to the pot. Add drained and rinsed great northern beans. Stir to combine.
- Bring chili to a gentle simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to an hour, stirring occasionally. Taste and adjust seasoning with salt and pepper before serving.
