  • 2 tablespoons Cajun seasoning, divided
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon extra virgin olive oil
  • 1 cup (113 g) Monterey Jack cheese, shredded
  • 1 cup (113 g) sharp cheddar cheese, shredded
  • ¼ cup (55 g) mayonnaise
  • 1 tablespoon sour cream
  • 1 tablespoon whole milk
  • 1 teaspoon hot sauce, plus more for drizzling
  • ½ teaspoon garlic powder
  • Chives, chopped for garnish

Instructions

  1. Preheat your oven to the temperature specified on the steak fry package. Prepare a large rimmed baking sheet by lining it with parchment paper or foil to make cleanup easier.
  2. In a large bowl, toss the frozen steak fries with 1 tablespoon of Cajun seasoning. Spread the fries out evenly in a single layer on the prepared baking sheet. Bake as directed on the package, adding an extra 5 to 10 minutes if you prefer your fries extra crispy.
  3. While the fries bake, heat the olive oil in a medium skillet over medium heat. Add the bite-sized chicken pieces and sprinkle with the remaining 1 tablespoon of Cajun seasoning. Cook the chicken, stirring occasionally, until it’s browned and cooked through, reaching an internal temperature of 165°F, about 6-8 minutes. Remove from heat.
  4. In a small bowl, whisk together mayonnaise, sour cream, whole milk, hot sauce, and garlic powder until smooth. Set this creamy hot sauce aside.
  5. Once the fries are golden and crispy, take them out of the oven. Evenly distribute the cooked chicken over the fries, then sprinkle the shredded Monterey Jack and sharp cheddar cheeses on top.
