- 2 celery stalks, diced

- 1/2 head green cabbage, chopped
- 1 (14.5 ounce) can diced tomatoes
- 4 to 6 cups vegetable broth
- 1 to 2 tablespoons fresh lemon juice
- 1/4 cup roughly chopped fresh parsley
- Freshly cracked black pepper, to taste
Instructions
- In a large stockpot or Dutch oven, heat the olive oil over medium-high heat. Add the diced onion, carrot, and celery, cooking for 4 to 5 minutes until softened.
- Incorporate the minced garlic, dried oregano, dried basil, and salt, stirring constantly for 1 minute until fragrant.
- Add the chopped cabbage to the pot. Cook for 5 minutes, stirring frequently, until the cabbage begins to soften.
- Pour in the vegetable broth and diced tomatoes. Bring the mixture to a gentle boil, then reduce heat and simmer uncovered for 10 minutes, or until the vegetables reach your desired tenderness.
- Remove the pot from the heat. Stir in the lemon juice, fresh parsley, and freshly cracked black pepper. Adjust seasoning to taste before serving warm.
