  • 1/2 teaspoon salt
  • 1/2 head green cabbage, chopped
  • 1 (14.5 ounce) can diced tomatoes
  • 4 to 6 cups vegetable broth
  • 1 to 2 tablespoons fresh lemon juice
  • 1/4 cup roughly chopped fresh parsley
  • Freshly cracked black pepper, to taste

Instructions

  1. In a large stockpot or Dutch oven, heat the olive oil over medium-high heat. Add the diced onion, carrot, and celery, cooking for 4 to 5 minutes until softened.
  2. Incorporate the minced garlic, dried oregano, dried basil, and salt, stirring constantly for 1 minute until fragrant.
  3. Add the chopped cabbage to the pot. Cook for 5 minutes, stirring frequently, until the cabbage begins to soften.
  4. Pour in the vegetable broth and diced tomatoes. Bring the mixture to a gentle boil, then reduce heat and simmer uncovered for 10 minutes, or until the vegetables reach your desired tenderness.
  5. Remove the pot from the heat. Stir in the lemon juice, fresh parsley, and freshly cracked black pepper. Adjust seasoning to taste before serving warm.
