Description

This cozy butternut-squash-sausage pasta is a rich and savory meal that’s perfect for any night. It also makes a wonderful Thanksgiving side.


Ingredients

  • 2 cups butternut squash, cut into 1/2-inch pieces
  • 1 tablespoon olive oil
  • Kosher salt
  • 1 (16-ounce) package cavatappi pasta
  • 1 pound bulk mild Italian sausage
  • 1 sweet onion, minced
  • 1/2 cup chopped kale (or fresh baby spinach)
  • 2 large cloves garlic, minced
  • 1 teaspoon fresh sage, minced
  • 1 1/2 cups reserved pasta water
  • 1/3 cup heavy cream
  • 1/2 cup shaved Asiago cheese
  • Ground black pepper, to taste
  • Fresh Parmesan cheese, for garnishing

Instructions

  1. In a bowl, mix the cubed butternut squash with olive oil and a pinch of salt. Spread it out on the baking sheet. Roast in the oven for about 45 minutes, flipping it halfway through cooking, until it’s tender and golden brown.
  2. While the squash is roasting, bring a large pot of salted water to a boil. Add the cavatappi pasta and cook according to the package instructions until it’s al dente (firm to the bite). Drain the pasta, but keep some of the cooking water—don’t rinse it!
  3. In a large skillet over medium heat, add the Italian sausage. Cook for 5-7 minutes, breaking it apart with a spoon until it’s browned and crumbled.
  4. Stir in the chopped onion, kale, minced garlic, and fresh sage. Add a pinch of salt. Cook for another minute until everything is mixed well.
  5. Pour in a bit of the reserved pasta water to deglaze the pan. Then add the heavy cream, shaved Asiago cheese, cooked pasta, and roasted butternut squash. Toss everything together and season with salt and pepper to taste. Garnish with grated Parmesan. Serve and enjoy!
