  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon garam masala
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1 (15 ounce) can crushed tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup plain yogurt
  • 1 tablespoon lemon juice
  • Salt to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Marinate chicken pieces with yogurt, lemon juice, and half of the garam masala, cumin, turmeric, and chili powder. Let it sit for at least 30 minutes.
  2. Melt butter in a large skillet or pot over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
  3. Add minced garlic and grated ginger. Cook for 1 minute until fragrant.
  4. Add the marinated chicken to the skillet and cook until browned on all sides.
  5. Stir in the remaining garam masala, cumin, turmeric, and chili powder. Cook for 1 minute.
  6. Pour in the crushed tomatoes. Bring to a simmer, then reduce heat, cover, and cook for 15-20 minutes, or until chicken is cooked through.
  7. Stir in the heavy cream and salt to taste. Cook for another 5 minutes, stirring occasionally, until the sauce has thickened and flavors have melded.
  8. Serve hot, garnished with fresh cilantro.

Notes

  • For a spicier dish, add more chili powder.
  • If you don’t have heavy cream, you can use evaporated milk.
