Instructions
- In a large skillet, melt 2 tablespoons of butter over low heat. Add 2 large thinly sliced yellow onions along with 1 tablespoon of brown sugar. Cook for 25-30 minutes, stirring occasionally, until the onions turn a deep amber color and become jammy.
- While onions are caramelizing, combine 1½ pounds of ground beef with 1 tablespoon of Worcestershire sauce, 1 teaspoon each of garlic powder and onion powder, 1 teaspoon of smoked paprika, 1 teaspoon of salt, and ½ teaspoon of black pepper. Mix gently until just combined.
- Once your onions are cool, transfer them to a food processor. Add ½ cup of mayonnaise, 2 tablespoons of sour cream, 1 minced garlic clove, and 1 tablespoon of fresh lemon juice. Blend until smooth.
- Wash and chop 6 cups of mixed greens or romaine lettuce. Dice 2 large tomatoes and 1 large cucumber. Thinly slice ½ large red onion. Set aside.
- Heat 2 tablespoons of olive oil in the same skillet over medium-high heat. Add the prepared ground beef mixture and cook for 8-10 minutes until browned and cooked through.
- To assemble, start with a base of greens, layer on the cooked beef, followed by diced vegetables, a dollop of aioli, and top with shredded cheddar cheese and chopped chives.
