- 1 cup semi-sweet chocolate chips (170 g)
- 1/2 cup unsalted butter (113 g)
- 3/4 cup granulated sugar (150 g)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour (60 g)
- 1/4 cup cocoa powder (25 g)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened (113 g)
- 3/4 cup brown sugar (150 g)
- 1 teaspoon vanilla extract
- 1 cup heat-treated all-purpose flour (120 g)
- 2 tablespoons milk
- 1/2 cup mini chocolate chips (85 g)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a microwave-safe bowl melt chocolate chips and butter together, stirring until smooth. Allow the mixture to cool slightly.
- Whisk sugar, eggs, and vanilla extract into the melted chocolate mixture until smooth.
- In another bowl combine flour, cocoa powder, baking powder, and salt. Fold dry ingredients into the batter until just combined.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet. Bake for 8–10 minutes until set. Allow cookies to cool completely.
- Beat softened butter and brown sugar until creamy. Add vanilla extract and mix well.
- Stir in heat-treated flour and milk until smooth, then fold in mini chocolate chips.
- Spread or scoop cookie dough filling onto the bottom of one brownie cookie and top with another cookie to form a sandwich. Repeat with remaining cookies.
