- 2 tbsp Spicy Brown Mustard (Avoid using Dijon mustard.)
- 1 tsp Thyme (Adds a fresh herbal note.)
- 1 tsp Smoked Paprika (Brings smoky depth.)
- 1/4 cup Maple Syrup (Agave syrup works as an alternative.)
- 2 tbsp Nutritional Yeast (Don’t skip this for flavor.)
- 1/2 cup Brown Sugar (Opt for dark brown sugar.)
Instructions
- Prepare the Tofu – Press the extra firm tofu for 3-4 hours to drain excess moisture and poke holes all over the tofu surface.
- Marinate – Combine soy sauce or tamari, chili garlic sauce, spicy brown mustard, thyme, smoked paprika, and maple syrup. Marinate the tofu for at least 24 hours.
- First Bake – Preheat oven to 400°F. Bake the tofu on a lined baking sheet for 20 minutes.
- Make the Glaze – Combine brown sugar and leftover marinade in a microwave-safe bowl. Heat until the sugar dissolves.
- Glaze and Bake Again – Brush the tofu with glaze and bake for an additional 10-20 minutes until caramelized.
- Rest, then Serve – Allow the tofu to rest for 10 minutes before slicing and serving.
