Description

Brown Butter Brookies combine the soft, chewy goodness of chocolate chip cookies with the rich, fudgy decadence of brownies. Enhanced with nutty brown butter, every bite is warm, gooey, and incredibly comforting.

  • 14.5 tbsp salted butter (206 grams)
  • 3/4 cup dark brown sugar, packed (163 grams)
  • 3/4 cup granulated sugar (156 grams)
  • 2 large eggs, at room temperature
  • 1 1/2 tsp vanilla extract
  • 3 cups all-purpose flour, spooned & leveled (390 grams)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups chocolate chips
  • 3/4 cup salted butter, cubed (170 g before browning, ~140 g after)
  • 4 oz semi-sweet chocolate, chopped (or chocolate chips)
  • 1/4 cup vegetable oil (56 mL)
  • 3/4 cup cocoa powder (63 g)
  • 3 large eggs, at room temperature
  • 1 large egg yolk, at room temperature
  • 3/4 cup granulated sugar (158 g)
  • 1 1/2 cups powdered sugar (174 g)
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup all-purpose flour (65 g)
  • Pinch of espresso powder (optional)
  • 1 cup semi-sweet chocolate chips
  • Flaky sea salt (optional, for topping)

Instructions

  1. Preheat oven to 350°F. Spray a 9×13 metal pan with nonstick spray and line with parchment.
  2. Melt butter. Whisk in dark brown sugar and granulated sugar. Add eggs and vanilla. Stir in dry ingredients, then chocolate chips. Press half the dough into the pan and reserve the rest.
  3. Melt cubed butter in a saucepan. Cook until golden brown and nutty (3–6 minutes).
  4. Stir chocolate into browned butter to melt. Whisk in oil and cocoa. Cool slightly, then mix in eggs, egg yolk, and granulated sugar. Add powdered sugar, vanilla, and salt. Fold in flour and chocolate chips.
  5. Spread half the brownie batter over the cookie layer. Add remaining cookie dough in pieces, then top with remaining brownie batter. Add extra chocolate chips if desired.
  6. Bake 38–44 minutes. A toothpick should come out with moist crumbs.
  7. Cool 1–2 hours before slicing. Store airtight 3–4 days or freeze up to 3 months.
