Ingredients

  • 2 cups broccoli florets
  • 1 can white beans, drained and rinsed
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • 1 lemon, juiced and zested
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat and sauté the minced garlic until fragrant.
  2. Add the orzo and toast it lightly for about 1 minute.
  3. Pour in the vegetable broth and bring to a simmer, stirring occasionally.
