- 1 tablespoon Butter
- 4 large Eggs
- 2 tablespoons Milk
- 1 pinch Salt
- 1 pinch Black Pepper
- 1 medium Avocado
- 1 tablespoon Lemon Juice
- 4 slices Bacon
- 2 slices Cheddar Cheese
- 2 slices Tomato
- 1 cup Fresh Spinach Leaves
Instructions
- In a medium skillet, heat over medium heat and lay the bacon slices in a single layer. Cook for 6-8 minutes until golden and crispy, flipping occasionally.
- While the bacon is cooking, cut the English muffins in half and toast them until golden brown, about 3-4 minutes. Spread a thin layer of butter on each half.
- In a bowl, whisk together the eggs, milk, salt, and pepper. Heat a non-stick skillet over medium-low heat and pour in the egg mixture. Stir gently for 4-6 minutes until softly set.
- While the eggs are cooking, slice the avocado and drizzle with lemon juice. Mash lightly with a fork.
- Layer your sandwich: place a scoop of scrambled eggs on each muffin half, followed by cheddar cheese, crispy bacon, and avocado mixture. Add optional tomato and spinach if desired.
- Serve the assembled sandwiches immediately while warm.
