  • 1/4 cup Brown sugar
  • 1/4 cup Rice vinegar
  • 6 cloves Garlic
  • 3 stalks Scallions (sliced)
  • 1 inch Fresh ginger (peeled and grated)
  • 2 tablespoons Olive oil
  • 1.52 lbs Boneless beef short ribs
  • 1/4 cup Flour
  • 2 cups Beef broth
  • 1 teaspoon Kosher salt
  • 1 teaspoon Pepper

Instructions

  1. Preheat your oven to 350°F. Start by mincing the garlic and scallions, and peel a 1-inch portion of ginger root.
  2. Whisk together the chili garlic sauce, sesame oil, soy sauce, brown sugar, and rice vinegar in a bowl.
  3. Coat the short ribs with flour, ensuring they are evenly coated.
  4. Sear the ribs in a hot cast iron dutch oven with olive oil for 3-4 minutes per side until browned.
  5. Sauté the minced garlic, scallions, and grated ginger in the same pan for 2-3 minutes.
  6. Combine the seared short ribs back into the pan and pour the marinade and beef broth over them.
  7. Cover the dutch oven and bake for 1 hour, then check and add more beef broth if needed, and cook for another hour.
  8. Finish with an additional 30 minutes of covered cooking until the ribs are melt-in-your-mouth tender.
