Irresistible Braised Korean Short Ribs for Epic Comfort Food

- 1/4 cup Chili garlic sauce
- 2 tablespoons Sesame oil
- 1/2 cup Low-sodium soy sauce
- 1/4 cup Brown sugar
- 1/4 cup Rice vinegar
- 6 cloves Garlic
- 3 stalks Scallions (sliced)
- 1 inch Fresh ginger (peeled and grated)
- 2 tablespoons Olive oil
- 1.5–2 lbs Boneless beef short ribs
- 1/4 cup Flour
- 2 cups Beef broth
- 1 teaspoon Kosher salt
- 1 teaspoon Pepper
Instructions
- Preheat your oven to 350°F. Start by mincing the garlic and scallions, and peel a 1-inch portion of ginger root.
- Whisk together the chili garlic sauce, sesame oil, soy sauce, brown sugar, and rice vinegar in a bowl.
- Coat the short ribs with flour, ensuring they are evenly coated.
- Sear the ribs in a hot cast iron dutch oven with olive oil for 3-4 minutes per side until browned.
- Sauté the minced garlic, scallions, and grated ginger in the same pan for 2-3 minutes.
- Combine the seared short ribs back into the pan and pour the marinade and beef broth over them.
- Cover the dutch oven and bake for 1 hour, then check and add more beef broth if needed, and cook for another hour.
- Finish with an additional 30 minutes of covered cooking until the ribs are melt-in-your-mouth tender.
