Ingredients

  • 1/4 cup maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 banana, mashed
  • 1/2 cup blueberries
  • 1/4 cup chopped walnuts

Instructions

  1. Preheat oven to 375°F (190°C). Grease a small baking dish.
  2. In a large bowl, combine oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk milk, maple syrup, egg, vanilla, and mashed banana.
  4. Combine wet and dry ingredients, then fold in blueberries and walnuts.
  5. Pour mixture into prepared baking dish. Bake for 35-40 minutes or until golden and set.
