Ingredients

- 4 cups Mixed greens
- 1 cup Fresh blueberries
- 4 oz Crumbled goat cheese
- 1/2 cup Walnuts
- 1/4 cup Red onion
- 1/4 cup Dried cranberries
- 1/4 cup Olive oil
- 2 tbsp Balsamic vinegar
- 2 tbsp Honey
- 1 tsp Dijon mustard
- 1 tsp Salt
- 1 tsp Black pepper
Instructions
- In a small bowl, combine olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Whisk until smooth and creamy, then set aside.
- In a large mixing bowl, add the mixed greens, fresh blueberries, crumbled goat cheese, toasted walnuts, and sliced red onion. Toss gently to combine.
- Drizzle the honey balsamic dressing over the salad and toss lightly to coat all the ingredients.
- Sprinkle with dried cranberries if desired and serve immediately.
