- 2 cups all-purpose flour
- 1 cup sourdough starter
- 1/2 cup warm water
- 1/2 teaspoon salt
- 1/4 cup sugar
- 1/2 cup blueberries (fresh or frozen)
- 4 ounces cream cheese, softened
- 1 tablespoon lemon juice
- 1 egg (for egg wash, optional)
Instructions
- In a large mixing bowl, combine your bubbly sourdough starter, warm water, and sugar. Stir to dissolve. Gradually add in the flour and salt, mixing until a shaggy dough forms. Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
- Place the kneaded dough into a greased bowl and cover it with a clean kitchen towel or plastic wrap. Set it in a warm spot to rise until it doubles in size—approximately 240 minutes depending on the temperature.
- Deflate the risen dough by pressing it down. Slowly fold in the blueberries, being careful not to burst them.
- Mix the softened cream cheese and lemon juice in a separate bowl until smooth.
- Deflate the dough once more and roll it out into a large rectangle on a floured surface. Spread the cream cheese mixture evenly over the dough and roll it up tightly, forming a log shape.
- Place this log into a loaf and place it in a greased loaf pan. Cover and allow it to rise once again until doubled in size—this typically takes about 60 to 120 minutes.
- Preheat your oven to 350°F (175°C). If you enjoy a shiny crust, brush the top of the loaf with a beaten egg wash at this point.
- Bake the loaf for 35-40 minutes, or until the top is beautifully golden brown and the loaf sounds hollow when tapped.
- Allow the loaf to cool in the pan for 10 minutes, then transfer it onto a wire rack to cool completely before slicing.
