- 1 sheet puff pastry (thawed, about 250 g)
- 200 g cream cheese, softened
- ¼ cup granulated sugar (50 g)
- 1 tsp vanilla extract
- 1 egg yolk
- 1 cup fresh or frozen blueberries (150 g)
- 2 tbsp sugar
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tbsp water
- 1 egg
- 1 tbsp milk
- ½ cup powdered sugar (60 g)
- 1 – 2 tbsp milk for glaze
- ¼ tsp vanilla extract for glaze
Instructions
- Prepare the blueberry mixture.
- In a small saucepan, combine blueberries, sugar, lemon juice, water, and cornstarch.
- Cook over medium heat for 4–6 minutes, stirring often, until thickened.
- Remove from heat and let cool completely.
- Make the cream cheese filling.
- In a bowl, beat cream cheese, sugar, vanilla, and egg yolk.
- Mix until smooth and creamy.
- Preheat oven to 400°F (200°C).
- Line a baking tray with parchment paper.
- Roll out puff pastry slightly and cut into 8 squares.
- Lightly score a smaller square inside each pastry piece (do not cut all the way through).
- Spoon 1 tbsp cream cheese filling into the center.
- Add 1 tbsp blueberry filling on top.
- Whisk egg and milk together.
- Brush the edges of the pastry.
- Bake for 18–22 minutes or until puffed and golden brown.
- Mix powdered sugar, milk, and vanilla for glaze.
- Drizzle over slightly cooled danishes.
