  • 1 sheet puff pastry (thawed, about 250 g)
  • 200 g cream cheese, softened
  • ¼ cup granulated sugar (50 g)
  • 1 tsp vanilla extract
  • 1 egg yolk
  • 1 cup fresh or frozen blueberries (150 g)
  • 2 tbsp sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tbsp water
  • 1 egg
  • 1 tbsp milk
  • ½ cup powdered sugar (60 g)
  • 12 tbsp milk for glaze
  • ¼ tsp vanilla extract for glaze

Instructions

  1. Prepare the blueberry mixture.
  2. In a small saucepan, combine blueberries, sugar, lemon juice, water, and cornstarch.
  3. Cook over medium heat for 4–6 minutes, stirring often, until thickened.
  4. Remove from heat and let cool completely.
  5. Make the cream cheese filling.
  6. In a bowl, beat cream cheese, sugar, vanilla, and egg yolk.
  7. Mix until smooth and creamy.
  8. Preheat oven to 400°F (200°C).
  9. Line a baking tray with parchment paper.
  10. Roll out puff pastry slightly and cut into 8 squares.
  11. Lightly score a smaller square inside each pastry piece (do not cut all the way through).
  12. Spoon 1 tbsp cream cheese filling into the center.
  13. Add 1 tbsp blueberry filling on top.
  14. Whisk egg and milk together.
  15. Brush the edges of the pastry.
  16. Bake for 18–22 minutes or until puffed and golden brown.
  17. Mix powdered sugar, milk, and vanilla for glaze.
  18. Drizzle over slightly cooled danishes.

  • Thaw the puff pastry in the refrigerator for best results.
