Delicious Blueberry Butter Swim Biscuits

- 1/2 cup unsalted butter
- 2 1/2 cups blueberries (fresh or frozen)
- 1/4 cup granulated sugar (for blueberries)
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract (optional)
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 1 1/2 cups whole milk
Instructions
- Preheat oven to 375°F (190°C) and place the butter in a 9×13 baking dish or oven-safe skillet. Let it melt in the oven as it preheats.
- In a bowl, toss the blueberries with 1/4 cup sugar, cornstarch, and vanilla extract. Set aside.
- In another bowl, mix flour, baking powder, sugar, and salt. Add milk and stir just until combined. The batter should be wet and thick.
- Carefully remove the dish from the oven once the butter is fully melted. Spread the blueberry mixture evenly over the melted butter.
- Dollop the biscuit batter on top of the blueberries in large spoonfuls. Do not spread — it will rise and spread on its own.
- Bake for 40–45 minutes or until golden brown and bubbling.
- Let cool for 10 minutes before serving to allow the juices to set.
- Serve warm, optionally topped with whipped cream, vanilla ice cream, or yogurt.
