Ingredients

  • 1 lb Smoked Sausage (Substitute with ground chicken or skip for a vegan version)
  • 1 Onion (Chopped, yellow or white onions work well)
  • 1 Bell Pepper (Diced, mix and match colors as desired)
  • 3 cloves Garlic (Minced, fresh is best)
  • 1 tsp Cumin (Can swap with ground coriander)
  • 1 tsp Smoked Paprika (Use regular paprika if necessary)
  • 1 tsp Oregano (Fresh or dried, both are great)
  • 1/4 tsp Cayenne Pepper (Optional, adjust to liking)
  • 1.5 cups Long-Grain White Rice (Avoid brown rice)
  • 2 cans Canned Black Beans (Rinsed well)
  • 4 cups Chicken or Vegetable Broth (Use vegetable broth for vegan option)
  • 1 Bay Leaf (Remove after cooking)

Instructions

  1. In a large pot, warm up 2 tablespoons of olive oil over medium-high heat. Once shimmering, add the sliced smoked sausage and cook until browned, about 5-7 minutes. Remove the sausage and set it aside.
  2. In the same pot, add 1 chopped onion and 1 diced bell pepper. Sauté for about 5 minutes until they soften and become aromatic.
  3. Stir in 3 minced garlic cloves, 1 teaspoon of cumin, 1 teaspoon of smoked paprika, 1 teaspoon of oregano, and optional cayenne pepper. Cook for 60 seconds until fragrant.
  4. Introduce 1 ½ cups of long-grain white rice to the pot, stirring for about 1 minute to lightly toast the rice.
  5. Pour in 4 cups of chicken or vegetable broth, making sure to scrape up any browned bits from the bottom. Bring this mixture to a gentle boil.
  6. Add 2 cans of rinsed black beans and 1 bay leaf, then gently stir in the reserved sausage.
  7. Cover the pot tightly, reduce the heat to low, and let it simmer for 18-20 minutes until the liquid is absorbed and the rice is tender.
  8. Turn off the heat and let the dish sit covered for an additional 5 minutes. Fluff with a fork and serve warm.
