Ingredients
For the Biscuit Crust:
- 2 cups all-purpose flour (or gluten-free flour blend)
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
- 6 tablespoons cold butter, cubed
- 3/4 cup buttermilk (or regular milk with 1 tablespoon lemon juice)
For the Sausage Gravy:
- 1 pound ground breakfast sausage (Jimmy Dean or similar)
- 1/4 cup all-purpose flour
- 2 1/2 cups whole milk
- 1/2 teaspoon black pepper (freshly ground preferred)
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- Pinch of cayenne pepper (optional)
For the Toppings:
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 4–6 large eggs
- 2 green onions, chopped
- 1/4 cup fresh chives, chopped
- Salt and pepper to taste
Instructions
- Prepare the Biscuit Crust: Preheat oven to 425°F (220°C). In a large bowl, whisk together flour, baking powder, salt, and sugar. Cut cold butter into cubes and work into flour mixture until it resembles coarse crumbs. Add buttermilk and gently stir until dough comes together. Roll into 12-inch circle and transfer to greased pizza stone.
- Pre-bake the Crust: Bake for 12-15 minutes until lightly golden and set. Remove and set aside.
- Make the Sausage Gravy: In large skillet over medium-high heat, cook breakfast sausage until well-browned, about 8-10 minutes. Don’t drain fat. Sprinkle flour over sausage and stir constantly for 2 minutes. Gradually add milk, whisking constantly. Simmer 3-5 minutes until thickened. Season with salt, pepper, garlic powder, and cayenne.
- Assemble the Pizza: Spread warm sausage gravy over pre-baked crust, leaving 1-inch border. Sprinkle with cheddar and mozzarella cheeses. Create small wells and crack eggs into each well. Season eggs with salt and pepper.
- Final Bake: Bake 12-15 minutes until cheese is melted and egg whites are set but yolks slightly runny. For fully cooked eggs, bake additional 3-5 minutes.
- Finish and Serve: Remove from oven and immediately sprinkle with chopped green onions and fresh chives. Let cool 5 minutes before slicing.
Notes
Make-Ahead Tips: Prepare biscuit dough and sausage gravy up to 24 hours in advance. Store dough wrapped in refrigerator and reheat gravy gently before assembly.
Perfect Gravy Consistency: The gravy should coat the back of a spoon but still be pourable. If too thick, add more milk; if too thin, simmer longer.
Egg Cooking Control: For perfectly runny yolks, crack eggs into small bowls first, then gently pour into wells on pizza.
Storage: Refrigerate leftovers for up to 3 days. Reheat in 350°F oven for 8-10 minutes for best texture.
Variations: Try turkey sausage for lighter option, add bacon bits or peppers for extra flavor, or use different cheese combinations.
