Decadent Biscoff Brownies That Will Melt in Your Mouth

- 8 oz Semi-Sweet or Dark Baking Chocolate
- 1 cup Granulated Sugar
- 2 large Eggs
- 1 tsp Vanilla Extract
- 1 cup All-Purpose Flour
- 1/2 cup Cocoa Powder
- 1/2 tsp Salt
- 1 cup Crushed Biscoff Cookies
- 1/2 cup Biscoff Cookie Butter
Instructions
- Preheat your oven to 350°F (180°C) and line an 8-inch square baking pan with parchment paper.
- Melt butter and semi-sweet or dark baking chocolate in a heatproof bowl over a double boiler or in the microwave. Stir until smooth.
- In a large bowl, whisk together eggs, granulated sugar, and vanilla extract until pale and frothy, about 2-3 minutes.
- Gently stir the cooled chocolate mixture into the egg and sugar mixture until combined.
- Sift in all-purpose flour, cocoa powder, and salt. Fold together until just combined.
- Fold in the crushed Biscoff cookies until evenly distributed.
- Pour the batter into the prepared pan, swirl in Biscoff cookie butter, and top with extra crushed cookies.
- Bake for 30-35 minutes until the top is set and a toothpick comes out with a few moist crumbs.
- Let the brownies cool completely in the pan and chill in the fridge for at least an hour before slicing.
