Ingredients

  • 8 oz Semi-Sweet or Dark Baking Chocolate
  • 1 cup Granulated Sugar
  • 2 large Eggs
  • 1 tsp Vanilla Extract
  • 1 cup All-Purpose Flour
  • 1/2 cup Cocoa Powder
  • 1/2 tsp Salt
  • 1 cup Crushed Biscoff Cookies
  • 1/2 cup Biscoff Cookie Butter

Instructions

  1. Preheat your oven to 350°F (180°C) and line an 8-inch square baking pan with parchment paper.
  2. Melt butter and semi-sweet or dark baking chocolate in a heatproof bowl over a double boiler or in the microwave. Stir until smooth.
  3. In a large bowl, whisk together eggs, granulated sugar, and vanilla extract until pale and frothy, about 2-3 minutes.
  4. Gently stir the cooled chocolate mixture into the egg and sugar mixture until combined.
  5. Sift in all-purpose flour, cocoa powder, and salt. Fold together until just combined.
  6. Fold in the crushed Biscoff cookies until evenly distributed.
  7. Pour the batter into the prepared pan, swirl in Biscoff cookie butter, and top with extra crushed cookies.
  8. Bake for 30-35 minutes until the top is set and a toothpick comes out with a few moist crumbs.
  9. Let the brownies cool completely in the pan and chill in the fridge for at least an hour before slicing.
