- ¾ cup granulated sugar
- ¼ cup packed light brown sugar
- 1 large egg
- 1 ½ teaspoons pure vanilla extract
- 1 ½ cups all-purpose flour
- 2 teaspoons cornstarch
- ½ teaspoon baking soda
- ½ teaspoon fine sea salt
- ½ cup rainbow sprinkles
Instructions
- In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and packed light brown sugar with an electric mixer on medium speed until light, fluffy, and pale in color. This should take about 3-5 minutes.
- Add the large egg and pure vanilla extract to the creamed butter and sugar mixture. Beat again on medium speed until thoroughly combined and smooth. Scrape down the sides of the bowl as needed.
- In a separate medium bowl, whisk together the all-purpose flour, cornstarch, baking soda, and fine sea salt. Gradually add this dry mixture to the wet ingredients in three additions, mixing on low speed until just incorporated. Do not overmix.
- Gently fold in the rainbow sprinkles using a spatula or wooden spoon until evenly distributed throughout the dough. Avoid overmixing.
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper. Drop rounded tablespoons of dough onto the prepared sheets, spacing them about 2 inches apart.
- Bake for 9 to 12 minutes, or until the edges are lightly golden brown and the centers still look slightly soft. Let cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
