Description

Birria Tacos are a tantalizing Mexican delight that combines tender, slow-cooked meat enveloped in warm corn tortillas, topped with fresh cilantro and onions. Each bite is complemented by a rich broth for dipping.


Ingredients

  • 2 lbs chuck roast
  • 4 dried guajillo chiles
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 3 cups low-sodium beef broth
  • 12 fresh corn tortillas
  • 1 cup chopped cilantro
  • 1 cup diced onions

Instructions

  1. Soak dried guajillo chiles in hot water for 15-20 minutes until softened. Drain and remove stems and seeds.
  2. Season the chuck roast with salt and pepper. Heat oil in a large pot and sear the roast on all sides until browned (4-5 minutes per side).
  3. Blend soaked chiles, onion, garlic, beef broth, and additional spices until smooth.
  4. Pour the blended sauce over the seared roast, cover, and simmer on low heat for about 3 hours until the meat is tender.
  5. Shred the cooked meat and warm corn tortillas on a skillet or open flame. Fill tortillas with shredded birria and top with cilantro and diced onions.
  6. Serve with small bowls of broth for dipping.
