Description
Birria Tacos are a tantalizing Mexican delight that combines tender, slow-cooked meat enveloped in warm corn tortillas, topped with fresh cilantro and onions. Each bite is complemented by a rich broth for dipping.

- 2 lbs chuck roast
- 4 dried guajillo chiles
- 1 large onion, chopped
- 4 garlic cloves, minced
- 3 cups low-sodium beef broth
- 12 fresh corn tortillas
- 1 cup chopped cilantro
- 1 cup diced onions
Instructions
- Soak dried guajillo chiles in hot water for 15-20 minutes until softened. Drain and remove stems and seeds.
- Season the chuck roast with salt and pepper. Heat oil in a large pot and sear the roast on all sides until browned (4-5 minutes per side).
- Blend soaked chiles, onion, garlic, beef broth, and additional spices until smooth.
- Pour the blended sauce over the seared roast, cover, and simmer on low heat for about 3 hours until the meat is tender.
- Shred the cooked meat and warm corn tortillas on a skillet or open flame. Fill tortillas with shredded birria and top with cilantro and diced onions.
- Serve with small bowls of broth for dipping.
