This classic beignets recipe yields delightful, fluffy French-style fried doughnuts dusted with powdered sugar.

- ¾ cup lukewarm water
- 1 large egg
- ½ cup milk
- 2 tablespoons unsalted butter, softened
- 2¼ teaspoons active dry yeast (or 1 envelope)
- ¼ cup sugar
- 3½ cups all-purpose flour
- ½ teaspoon salt
- Vegetable oil (for frying, about 3 inches deep)
- Powdered sugar (for sprinkling, optional)
Instructions
- In a small bowl, combine lukewarm water, active dry yeast, and sugar. Whisk lightly and let it sit for 5 to 10 minutes until the yeast dissolves and becomes frothy.
- Add the egg and milk to the yeast mixture and whisk until well combined.
- In the bowl of a stand mixer, combine the flour and salt. Add the yeast mixture and softened butter. Using the dough hook attachment, mix the ingredients until the dough pulls away cleanly from the sides of the bowl.
- Transfer the dough to a lightly oiled bowl. Cover with a damp cloth or plastic wrap and allow it to rise in a warm place for 1 to 2 hours until doubled in size.
- Roll the risen dough out on a floured surface into a long rectangle about ¾ inch thick. Cut the dough into long strips, then cut these strips into squares.
- Pour vegetable oil into a deep frying pan or Dutch oven to a depth of about 3 inches. Heat the oil to 350°F (177°C) and monitor temperature.
- Carefully fry about 5 or 6 beignets at a time until golden brown on both sides, turning them to cook evenly.
- Transfer fried beignets to a paper towel-lined bowl to absorb excess oil. Sprinkle generously with powdered sugar and serve warm.
