Ingredients

  • 2 pounds cubed beef stew meat or sirloin tips
  • 1 tbsp olive oil
  • 23 cloves garlic, minced
  • ½ yellow onion, diced
  • Salt and pepper to taste
  • 2 cups beef broth
  • 1 tbsp ghee or dairy-free butter
  • Optional: 1 teaspoon coconut aminos or Worcestershire sauce
  • 2 tbsp tapioca flour or cornstarch dissolved in 2 tbsp cold water (for Keto, substitute ½ tsp xanthan gum)
  • 2 (12 oz) bags cauliflower rice or 1.5 heads cauliflower, chopped into florets
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp chives, fresh or dry
  • 2 tbsp coconut milk
  • 2 tbsp dairy-free sour cream or regular sour cream if not dairy-free

Instructions

  1. Season the beef tips generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear the beef tips on all sides until nicely browned to develop deep flavor.
  2. Push the beef to one side of the skillet. On the other side, add diced onions and minced garlic, sautéing until the onions become translucent and the garlic is fragrant, about 30-40 seconds.
  3. Add the ghee and beef broth to the skillet, then stir in the tapioca flour or cornstarch slurry gradually while whisking constantly to avoid lumps. For a keto-friendly thickener, sprinkle xanthan gum directly into the broth and whisk until thickened. Optionally, add a splash of Worcestershire sauce or coconut aminos for extra umami.
  4. Bring the mixture to a gentle simmer, reduce heat to low, and let it cook uncovered for about 30 minutes or until the beef is tender and the gravy reaches your preferred thickness. Adjust seasoning with salt and pepper to taste.
  5. If using frozen cauliflower rice, cook according to package instructions and drain any excess moisture. If using fresh cauliflower florets, steam over boiling water in a steamer basket for 10-15 minutes until fork-tender. Drain thoroughly and pat dry to prevent watery mash.
  6. Place the cooked cauliflower in a food processor with garlic powder, onion powder, chives, coconut milk, dairy-free sour cream, and salt and pepper. Blend until smooth and creamy. Add more coconut milk tablespoon by tablespoon if a thinner consistency is desired. Garnish with fresh chives.
  7. Plate the creamy cauliflower mash and spoon the tender beef tips and rich gravy over the top. Garnish with fresh parsley or herbs of choice for a finishing touch.
